Hearty Mushroom Veggie Chili
ingredients
- 2 medium courgettes, chopped
- 1 can (15 oz) taco mixed beans, drained and rinsed
- 1 can (15 oz) black-eyed beans, drained and rinsed
- 1 can (28 oz) chopped tomatoes
- 2 cups mushrooms, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup vegetable broth
- Fresh cilantro, for garnish (optional)

In a slow cooker, combine the courgettes, taco mixed beans, black-eyed beans, chopped tomatoes, and sliced mushrooms.

Add the diced onion, minced garlic, chili powder, cumin, smoked paprika, salt, pepper, and vegetable broth.

Stir gently to mix all ingredients well.

Cover and cook on low for 6-8 hours or high for 3-4 hours, until the vegetables are tender.
- 5.
Taste and adjust seasoning as needed before serving.
- 6.
Ladle the chili into bowls and garnish with fresh cilantro, if desired.
