Smoked Sausages with Lentils

- 1 tablespoon olive oil
- 8 schinkengriller sausages (21 oz)
- 1 cup (7 oz) French-style green lentils
- 1½ cups (12.5 fl oz) chicken stock
- 1 stalk celery (5.3 oz), trimmed and chopped finely
- 1 medium carrot (4.2 oz), chopped finely
- 1 medium onion (5.3 oz), chopped finely
- 2 sprigs fresh thyme
- 2 cloves garlic, crushed
- 14 oz can diced tomatoes
- 1 tablespoon wholegrain mustard

Heat olive oil in a large pot over medium heat.

Add the schinkengriller sausages and brown them on all sides, about 5-6 minutes.

Remove the sausages from the pot and set aside.

In the same pot, add chopped onion, celery, and carrot. Sauté for about 5 minutes until softened.

Stir in the garlic and cook for an additional minute until fragrant.

Add the French-style green lentils, chicken stock, diced tomatoes (with juice), thyme, and wholegrain mustard to the pot.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 30 minutes.

After 30 minutes, stir in the browned sausages and simmer uncovered for another 30-45 minutes, or until lentils are tender.

Season to taste with salt and pepper. Serve warm, garnished with fresh thyme if desired.
