A spicy blend of roasted veggies, black beans, avocado, and quinoa with a fresh salsa twist.
ingredients
- 2 large sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 avocado, sliced
- 1 cup cooked quinoa
- 1 cup fresh salsa
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste Optional toppings: cilantro, lime wedges, shredded cheese
