Savory Soy Curl Stir-Fry

These hearty soy curls soak up the flavor of a savory sauce full of ginger, garlic, and tamari. Served over a bed of rice with fresh veggies and mushrooms, this stir-fry is a plant-based meal full of protein and nutrients.
ingredients
- 1 cup soy curls
- 1 cup cooked rice
- 2 cups sliced mixed vegetables (broccoli, bell peppers, carrots, onions)
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1/4 cup tamari
- 1 tbsp cornstarch
- 2 tbsp water
- 2 tbsp oil

Rehydrate soy curls in warm water for 15-20 minutes until soft. Drain and squeeze out excess water.

In a small bowl, mix tamari, cornstarch, water, garlic, and ginger into a sauce.

Heat oil in a wok or large skillet over medium heat. Add in soy curls and stir-fry for 2-3 minutes until golden brown.

Add in vegetables and mushrooms and stir-fry for another 5-7 minutes until veggies are tender-crisp.

Pour in sauce and continue to stir-fry for another 2-3 minutes until sauce thickens and everything is coated.

Serve over cooked rice.
