Savory Spinach-Mushroom Frittata

- 1 cup mushrooms, sliced
- 1 cup fresh spinach, chopped
- ½ medium onion, diced
- 2 cloves garlic, minced
- 4 large eggs
- ½ cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: red pepper flakes for heat

Preheat your oven to 375°F (190°C).

In an oven-safe skillet, heat olive oil over medium heat. Add diced onion and sauté for about 3 minutes until translucent.

Stir in minced garlic and sliced mushrooms; cook until mushrooms are tender, around 5 minutes.

Add chopped spinach to the skillet and cook until wilted, about 2 minutes. Season with salt, pepper, and optional red pepper flakes.

In a bowl, whisk together the eggs with a pinch of salt and pepper.

Pour the eggs evenly over the sautéed vegetables, gently stirring to combine. Allow the mixture to cook undisturbed for 3-4 minutes until the edges begin to set.
