Crispy tofu cubes tossed in smoky barbecue sauce, served on a bed of black beans, corn and bell pepper. A delicious and nutritious plant-based meal, perfect for lunch or dinner.
ingredients
- 1 (14 oz) block of firm tofu
- 1/2 cup of your favorite barbecue sauce
- 1 can of black beans, drained and rinsed
- 1 cup of frozen corn
- 1 red bell pepper, sliced
- 1 tbsp of olive oil
- Salt and black pepper, to taste
steps

Preheat oven to 375°F.

Drain the tofu and pat it dry with paper towels. Cut into small cubes.

In a bowl, toss the tofu cubes with barbecue sauce until every piece is covered.

Coat a baking sheet with cooking spray and spread the tofu cubes in a single layer. Bake for 20-25 minutes, or until crispy.

In a skillet over medium heat, add olive oil, corn, black beans and red bell pepper. Season with salt and black pepper. Cook until the bell pepper is soft and lightly browned.

In a bowl, add the black bean mixture and top with the crispy barbecue tofu cubes. Serve hot.
