Spicy Lentil Power Soup

- 1 cup red lentils
- 4 cups vegetable broth
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- Fresh cilantro, for garnish

In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery. Sauté until the vegetables are soft and translucent.

Rinse the red lentils under cold water and drain. Add them to the pot along with the cumin, paprika, turmeric, and cayenne pepper. Stir well to coat the lentils with the spices.

Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and let simmer for about 25 minutes or until the lentils are tender.

Use an immersion blender to partially puree the soup, leaving some lentils intact for texture. Alternatively, transfer half of the soup to a blender, blend until smooth, and return it to the pot.

Season with salt and pepper to taste. For an extra kick, add more cayenne pepper if desired.
