- 1 tsp chili powder
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup bell peppers, sliced (mix of colors)
- 2 cups cooked rice
- 8 medium-sized tortillas
- Salt and pepper to taste
- Olive oil for sautéing
steps
- 1.
Preheat your oven to 300°F (150°C).
- 2.
Season the pork shoulder with smoked paprika, cumin, chili powder, salt, and pepper.
- 3.
In a large, oven-safe pot, heat olive oil over medium heat, then brown the pork on all sides.
- 4.
Add sliced onion and minced garlic, cooking until the onion is translucent.
- 5.
Pour in the beef broth, cover the pot, and place it in the oven for 3-4 hours or until the pork is tender and easily shredded.
- 6.
Remove the pork from the pot and let it rest. Strain the broth, if desired.
- 7.
In the same pot, add sliced mushrooms and bell peppers; sauté until tender.
- 8.
While the vegetables cook, shred the pork with two forks. Mix in some reserved broth for added moisture.
- 9.
Serve the pulled pork over rice with sautéed vegetables and wrap it in warm tortillas.
