- 1 lb tomatillos, husked and rinsed
- 1 medium onion, quartered
- 2 tbsp lard
- 1 jalapeño, stemmed and halved (seeds removed for less heat)
- 2 cloves garlic, peeled
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- Salt, to taste
- Pepper, to taste

Preheat the grill or a skillet over medium-high heat.

Toss the tomatillos, onion, jalapeño, and garlic with lard until well coated.

Grill or sauté the ingredients for about 10-15 minutes until charred and caramelized, turning occasionally.
