- 1 lb boneless skinless chicken breast, diced
- 1 cup unsalted chicken broth
- 1 cup low sodium tomato sauce
- 1 green bell pepper, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper
- 1/4 tsp ground cumin
- 2 tbsp olive oil, divided
- 1 cup long grain rice
- 2 cups water
- Fresh parsley, for garnish

In a large skillet, heat 1 tbsp olive oil over medium heat. Add the diced chicken and cook until browned, about 5 minutes. Remove chicken from skillet and set aside.

In the same skillet, add the remaining olive oil and sauté the bell pepper, onion, and garlic until softened, about 5 minutes.

Stir in the smoked paprika, black pepper, dried thyme, cayenne pepper, and ground cumin.

Add the chicken broth, tomato sauce, and browned chicken back to the skillet. Bring to a simmer and cook for 20 minutes, stirring occasionally.

In another pot, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
