Southwest Quinoa Wrap
ingredients
- 1 cup quinoa
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 avocado, sliced
- 1/2 cup salsa
- 4 whole grain wraps
- Salt and pepper, to taste
- Optional toppings: shredded cheese, cilantro, lime wedges

In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is cooked.

In a large bowl, mix together cooked quinoa, black beans, corn, avocado, and salsa. Season with salt and pepper.

Place a scoop of the quinoa mixture onto each whole grain wrap. Add optional toppings, if desired.
- 4.
Fold in the sides of the wrap and then roll up tightly. Cut in half and serve.
