- 15 grams instant yeast
- 5 grams ground cinnamon
- 1.25 grams salt
- 113 grams unsalted butter, cold and cubed
- 240 milliliters milk
- 60 milliliters maple syrup
- 5 milliliters vanilla extract
- 100 grams brown sugar
- 10 grams ground cinnamon
- 57 grams unsalted butter, softened
- 60 grams raisins (optional)
- 60 grams chopped walnuts (optional)

Preheat the oven to 220°C and lightly grease a baking dish.

In a large mixing bowl, combine whole wheat pastry flour, instant yeast, ground cinnamon, and salt.

Add the cold cubed butter to the dry ingredients and use your fingertips or a pastry cutter to cut it into the flour mixture until it resembles coarse crumbs.

Heat the milk until it is warm (around 37°C). Pour the warm milk, maple syrup, and vanilla extract into the flour mixture. Mix until a sticky dough forms.

Transfer the dough onto a lightly floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic.

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for approximately 1 to 1.5 hours or until doubled in size.

Punch down the risen dough and roll it out into a rectangular shape, about 30x40 centimeters.
