Spiced Apple Carrot Cake with Ginger and Walnut

- 225 grams all-purpose flour
- 180 grams grated carrots
- 200 grams grated apple
- 150 grams granulated sugar
- 75 grams raisins
- 75 grams chopped walnuts
- 120 ml vegetable oil
- 120 ml unsweetened plant-based milk (e.g., almond, soy)
- 1 tablespoon ground flaxseed + 45 ml water (egg replacer)
- 5 grams baking powder
- 5 grams baking soda
- 5 grams ground cinnamon
- 2.5 grams ground ginger
- 2.5 grams ground nutmeg
- 2.5 grams salt

Preheat the oven to 175°C and grease a 23cm round cake pan.

In a small bowl, combine the ground flaxseed and water, set aside to thicken for 5 minutes.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

Add the grated carrots, grated apple, raisins, chopped walnuts, vegetable oil, plant-based milk, and the flaxseed mixture to the dry ingredients. Stir until just combined.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, you can optionally frost the cake with vegan cream cheese frosting and decorate with additional walnuts.
