Spiced Citrus Winter Mead

- 5 liters mineral water
- 3 big oranges, sliced
- 0.07 lb raisins
- 1 1/2 kg honey
- 0.02 lb dry yeast
- 0.55 lb dark muscovado sugar
- 2 star anise (whole)
- 2 teaspoons cloves (whole)
- 3 tablespoons dried orange peel
- 2 sticks cinnamon (whole)
- 2 teaspoons cardamom (whole)

In a large pot, bring 5 liters of mineral water to a gentle simmer.

Add sliced oranges, raisins, dried orange peel, star anise, cloves, cinnamon, and cardamom to the pot.

Stir in the honey and dark muscovado sugar until fully dissolved.

Allow the mixture to simmer for about 15 minutes, stirring occasionally.

Remove from heat and let it cool to room temperature.

Once cooled, sprinkle in the dry yeast and stir gently.

Cover the pot with a clean cloth and let it ferment in a dark, warm place for 5-7 days.
