Spiced Pumpkin Superfood Oats

This vegan overnight oats recipe combines the warm flavors of pumpkin spice with the crunch of pumpkin seeds and the added nutritional benefits of flax meal. A delicious and satisfying breakfast that is both vegan and gluten-free!

- 1 cup gluten-free rolled oats
- 1 cup unsweetened almond milk
- ½ cup pumpkin puree
- 2 tablespoons flax meal
- 2 tablespoons pumpkin seeds
- 1 tablespoon maple syrup

- ½ teaspoon vanilla extract
- Pinch of salt
