Spicy Beef Karahi

- 2 lbs beef stew meat, cut into cubes
- 1 large onion, sliced
- 2-3 garlic cloves, minced
- 2 inches ginger, grated
- 2-3 fresh green chili peppers, thinly sliced
- 2-3 large tomatoes, chopped
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp garam masala
- 1 tsp salt
- ¾ cup water
- 2 tbsp oil
- Fresh cilantro, chopped for garnish

In a large pot or karahi (wok), heat oil over medium heat. Add cumin and coriander seeds and cook until fragrant, about 30 seconds.

Add onions and cook until softened, about 5 minutes. Add garlic, ginger, and green chili peppers, and cook for another 2-3 minutes.

Add beef and cook until browned on all sides, about 7-8 minutes.

Add tomatoes, turmeric, paprika, garam masala, and salt and stir well. Cover and let it simmer for 30-40 minutes, or until the beef is tender, stirring occasionally.

Add water if necessary to thin out the sauce, and let it simmer uncovered for an additional 5-10 minutes.

Garnish with fresh cilantro and serve hot with naan bread or rice.
