ingredients
- 8 oz dried noodles
- 2 chicken breasts, thinly sliced
- 2 cloves garlic, minced
- 3 green onions, sliced
- 1 carrot, julienned
- 1/2 red bell pepper, thinly sliced
- 1/2 cup buffalo hot sauce
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Oil for frying
steps
- 1.
Cook the noodles according to package instructions. Drain and set aside.
- 2.
In a small bowl, whisk together the buffalo hot sauce, soy sauce, and honey. Set aside.
- 3.
Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the chicken and season with salt and pepper. Cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- 4.
In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Add the julienned carrot, sliced bell pepper, and half of the sliced green onions. Cook for 2-3 minutes until the vegetables are crisp-tender.
- 5.
Push the vegetables to one side of the skillet and add the cooked noodles to the other side. Drizzle some oil over the noodles and cook for 2-3 minutes, allowing them to crisp up slightly.
- 6.
Pour the buffalo sauce over the noodles and toss well to coat. Add the cooked chicken back into the skillet and toss everything together until well combined.
- 7.
Serve the Spicy Buffalo Crunch Noodles hot, garnished with the remaining sliced green onions for an extra pop of color and freshness.
