Tender pork loin rubbed with spicy Cajun seasoning, perfectly cooked and served over zesty Creole seasoned white rice - a flavor explosion in every bite!
ingredients
- 1 pork loin (2 lbs)
- 2 tbsp Cajun seasoning
- 1 cup white rice
- 1 ½ cups chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- Salt and pepper to taste
- Olive oil
- Chopped parsley for garnish

Preheat oven to 375°F.

Rub pork loin with Cajun seasoning.

In a skillet, sear pork loin on all sides.

Transfer pork loin to a baking dish, roast for 25-30 minutes.

In a pot, sauté onion, bell pepper, and garlic in olive oil.

Add rice, chicken broth, diced tomatoes and season with salt and pepper.

Simmer until rice is cooked.

Let pork loin rest before slicing.

Serve sliced pork over Creole rice, garnish with parsley.
