Spicy Chorizo Lentil Stew

ingredients
- 1 cup dried lentils
- 8 oz chorizo, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 carrot, diced
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- Salt and black pepper, to taste
- Fresh cilantro, chopped (for garnish)

Rinse the lentils thoroughly and set aside.

In a large pot, cook the chorizo slices over medium heat until browned. Remove and set aside.

In the same pot, sauté the onion, garlic, bell pepper, and carrot until softened.
