Spicy Crunchy Delight

- 1 cup all-purpose flour
- 1/4 cup melted ghee
- 1/2 teaspoon salt
- 1/4 cup water
- 2 medium potatoes, boiled and mashed
- 1/2 cup green peas, cooked and mashed
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon ground coriander
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1 tablespoon chopped fresh cilantro
- Oil for deep frying

In a mixing bowl, combine flour, melted ghee, and salt. Slowly add water and knead until a smooth dough forms. Cover and let it rest for 20 minutes.

Heat oil in a pan, add cumin seeds, and let them splutter. Add chopped onions, green chilies, and ginger-garlic paste. Sauté until onions turn golden brown.

Stir in the mashed potatoes, peas, ground coriander, turmeric powder, red chili powder, and salt to taste. Cook for 5 minutes, then add fresh cilantro. Mix well and allow the filling to cool.

Divide the dough into small balls and roll each ball into a thin circle. Cut it in half to form semi-circles.

Take one semi-circle, moisten the straight edge with water and shape it into a cone, sealing the edges. Fill the cone with 1-2 tablespoons of the prepared filling and seal the top by moistening the remaining edge with water.

Repeat the process with the remaining dough and filling.

Heat oil in a deep pan and fry the samosas until golden brown and crisp. Remove them from the oil and drain on a paper towel.
