- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeño, seeded and minced

steps
- 1.
In a small bowl, whisk together olive oil, lime juice, minced garlic, cumin, smoked paprika, chili powder, dried oregano, cayenne pepper, salt, and black pepper.
- 2.
Place the pork chops in a shallow dish and pour the marinade over them. Rub the marinade onto both sides of the chops. Let them marinate for at least 30 minutes (or up to 4 hours in the refrigerator) to enhance the flavors.

Grill the pork chops for 5-6 minutes per side, or until they reach an internal temperature of 145°F (63°C). Remove from the grill and let them rest for a few minutes.
- 5.
Meanwhile, prepare the salsa by combining diced tomatoes, red onion, cilantro, jalapeño, lime juice, and a pinch of salt in a bowl. Mix well.
- 6.
Serve the grilled pork chops with a generous spoonful of the zesty salsa on top. Pair them with rice, grilled vegetables, or a fresh salad for a complete fiesta feast!
