Spicy Ginger Turmeric Soup

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Pinch of cayenne pepper (optional)
- 4 cups vegetable broth
- 3 cups butternut squash, peeled and cubed
- 1 cup carrots, chopped
- 1 cup red lentils
- 1 can (14 ounces) coconut milk
- Salt and pepper, to taste
- Fresh cilantro, for garnish (optional)

In a large pot, heat the olive oil over medium heat. Add the onion and sauté for 5 minutes, until translucent.

Add the garlic, ginger, turmeric, cumin, coriander, and cayenne pepper (if using). Cook for 1-2 minutes, stirring continuously.

Pour in the vegetable broth and bring to a boil. Add the butternut squash, carrots, and lentils. Reduce heat, cover, and simmer for 20-25 minutes, or until the vegetables are tender.

Stir in the coconut milk and season with salt and pepper to taste. Simmer for an additional 5 minutes.

Using an immersion blender, blend the soup until smooth and creamy. Alternatively, carefully transfer the soup to a blender and blend in batches.
