Green Chile Infused Wine

- 2 lbs New Mexico green chilies, roasted, frozen, thawed, and peeled
- Zest of 2 lemons
- 5 lb bag of white sugar
- 1 tbsp yeast nutrients
- 1 packet wine yeast (specific for desired fermentation level)
- 1 gallon water

Begin by puréeing the thawed chilies in a food processor or blender until smooth.

In a large pot, combine the chili purée, lemon zest, and 1 gallon of water, stirring well.

Gradually add the white sugar, stirring over medium heat until fully dissolved.

Once the sugar is dissolved, remove the pot from heat and let the mixture cool to room temperature.

In a small bowl, activate the wine yeast according to package instructions before adding it to the cooled mixture.

Stir in the yeast nutrients to promote fermentation.

Transfer the mixture into a sanitized fermentation vessel, ensuring there's sufficient space for bubbling.

Cover the fermenter with an airlock or a cloth and place it in a cool, dark area for 7-14 days, stirring daily.

After fermentation, strain the liquid through a fine mesh sieve to remove solids.

Bottle your green chile infused wine, let it age for a few weeks for enhanced flavor, and serve chilled to enjoy the spicy, zesty notes.
