ingredients
- 2 pounds chicken wings
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 cup hot sauce
- 2 tablespoons unsalted butter
- 1 tablespoon honey
- Vegetable oil, for grilling
- Celery sticks and blue cheese dressing, for serving
steps
- 1.
Preheat the sous vide water bath to 150°F (65°C).
- 2.
In a mixing bowl, combine salt, paprika, garlic powder, onion powder, cayenne pepper, and black pepper to create a spice rub.
- 3.
Pat dry the chicken wings and sprinkle the spice rub evenly over them.
- 4.
Place the seasoned chicken wings in a sous vide bag and seal using the water displacement method.
- 5.
Submerge the bag in the preheated water bath and cook for 2 hours.
- 6.
While the wings are cooking, prepare the buffalo sauce. In a small saucepan, heat the hot sauce, butter, and honey over low heat until the butter melts. Remove from heat and set aside.
- 7.
Once the chicken wings are done cooking, remove them from the sous vide bath and pat them dry.
- 8.
Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking.
- 9.
Grill the chicken wings for 5-7 minutes per side, or until they develop a charred and crispy exterior.
- 10.
While still hot, toss the grilled wings in the buffalo sauce until evenly coated.
- 11.
Serve the spicy grilled buffalo wings with celery sticks and blue cheese dressing on the side.
