A nourishing bowl with spiced lentils, seasoned Brussel sprouts, creamy avocado, and zesty lime dressing topped with roasted carrots and bell peppers.
ingredients
- 1 cup brown rice
- 1 ½ cups cooked jerk lentils
- 2 cups Brussel sprouts, halved
- 1 avocado, sliced
- 2 carrots, sliced
- 1 bell pepper, sliced
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp jerk seasoning
- 1 lime, juiced
- 1 garlic clove, minced
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp chili powder

Cook brown rice according to package instructions.

Preheat oven to 400°F. Toss Brussel sprouts, carrots, and bell pepper with olive oil, salt, pepper, paprika, cumin, and chili powder. Roast for 25 minutes.

In a small bowl, mix jerk seasoning, lime juice, and minced garlic.

Heat a skillet over medium heat and add cooked lentils and jerk seasoning mixture. Cook for 5-7 minutes.

Assemble bowls with brown rice, jerk lentils, roasted veggies, avocado slices. Drizzle with extra lime dressing before serving.
