Spicy red beans cooked with Cajun-seasoned turkey, served over rice with a hint of smoke.
ingredients
- 2 lbs dried red beans, soaked
- 1 smoked turkey wing, shredded
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 2 tbsp Cajun seasoning
- 1 tbsp paprika
- 1 tbsp thyme
- 1 bay leaf
- 6 cups chicken broth
- Salt and pepper to taste
- Cooked white rice, for serving

Combine red beans, shredded turkey, onion, garlic, bell pepper, Cajun seasoning, paprika, thyme, bay leaf, and chicken broth in a pot.
