ingredients
- 2 cups cooked long-grain rice
- 1 lb large shrimp, peeled and deveined
- 1 red bell pepper, thinly sliced
- 1 cup green peas
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 2 red chilies, finely chopped
- 3 tablespoons soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons vegetable oil
- 1 tablespoon sambal oelek (Indonesian chili paste)
- 2 teaspoons sugar
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- Fresh cilantro, for garnish
- Lime wedges, for serving
steps
- 1.
Heat vegetable oil in a large pan over medium-high heat. Sauté garlic and onion until fragrant and golden.
- 2.
Add shrimp and cook until they turn pink and are cooked through. Remove shrimp from the pan and set aside.
- 3.
In the same pan, add red bell pepper and green peas. Stir-fry for a few minutes until tender-crisp.
- 4.
Push the vegetables to one side of the pan, creating a space in the center. Add red chilies and sambal oelek to the center, then stir everything together.
- 5.
Add cooked rice to the pan and break up any clumps. Stir-fry for a few minutes to heat the rice evenly.
- 6.
Drizzle soy sauce and fish sauce over the rice, followed by sugar, ground coriander, and turmeric. Mix well until the rice is coated evenly.
- 7.
Return the cooked shrimp to the pan and toss everything together, making sure the flavors are well combined.
- 8.
Remove from heat and garnish with fresh cilantro. Serve hot with lime wedges on the side.
