ingredients
- 2 tbsp vegetable oil
- 4 cloves garlic, minced
- 1 onion, sliced
- 2-3 Thai chili peppers, sliced
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup bok choy, chopped
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp palm sugar
- 1 lime, juiced
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper, to taste

Heat a wok or skillet over high heat. Add oil, garlic, onion, and chili peppers. Stir fry for 1-2 minutes.

Add chicken and stir fry for 5-6 minutes or until cooked through.

Add bell peppers and bok choy and stir fry for 2-3 minutes.

In a small bowl, mix together soy sauce, fish sauce, palm sugar, lime juice, basil, salt, and pepper. Add to stir fry and stir until evenly coated.

Serve hot over jasmine rice.
