- 1 block of tofu, drained and pressed
- 3 chipotle peppers in adobo sauce
- 2 tablespoons adobo sauce
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon honey
- Salt and pepper, to taste
- 1 cup shredded lettuce
- 1 ripe avocado, sliced
- Lime wedges, for serving
- 8 small corn or flour tortillas

Preheat the oven to 375°F (190°C). Slice the tofu into thin strips and place them on a parchment-lined baking sheet.
