ingredients
- 1 1/4 cups fresh spinach, chopped
- 3 large eggs
- 1 1/4 cups heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup onion, finely chopped
- 2 tablespoons olive oil
- Optional: 1/2 cup cooked bacon or ham, diced
steps
- 1.
Preheat the oven to 375°F (190°C). If using a homemade crust, roll it out and place it in a 9-inch pie pan, crimping the edges as desired. Pre-bake for 10 minutes.
- 2.
In a skillet, heat olive oil over medium heat. Add the onions and sauté until translucent, about 5 minutes.
- 3.
Add the chopped spinach and cook until wilted, roughly 2-3 minutes. Remove from heat.
- 4.
In a large mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
- 5.
Stir in the sautéed spinach and optional cooked bacon or ham, mixing until evenly distributed.
- 6.
Pour the filling into the pre-baked crust, spreading it out evenly.
- 7.
Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top.
- 8.
Allow to cool for 10 minutes before slicing. Serve warm or at room temperature.
