Light and fresh haddock dish perfect for summer gatherings. Haddock fillets seasoned with citrus and herbs, served with a side of grilled vegetables and a lemon butter sauce.
ingredients
- 4 haddock fillets
- 2 lemons (zested and juiced)
- 2 cloves of garlic (minced)
- 2 tablespoons of fresh parsley (chopped)
- 1 yellow bell pepper (sliced)
- 1 zucchini (sliced)
- 4 tablespoons of butter
- Salt and pepper to taste

Preheat grill to medium-high heat.

In a bowl, mix lemon zest, garlic, and parsley. Season haddock fillets with salt and pepper, then rub with lemon mixture.

Grill haddock for 4-5 minutes per side, until cooked through.

In a separate pan, sauté bell pepper and zucchini with a tablespoon of butter.

In a small saucepan, melt remaining butter and stir in lemon juice. Drizzle over grilled haddock.
