ingredients
- 1 lb pork shoulder, slow-cooked and shredded
- 1 can (14 oz) coconut milk
- Juice and zest of 2 limes
- 2 tablespoons fresh ginger, grated
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili flakes (optional)
- 8 small flour tortillas
- Toppings: sliced radish, chopped red onion, avocado slices, fresh cilantro
steps
- 1.
In a saucepan, combine the coconut milk, lime juice, lime zest, ginger, cilantro, honey, soy sauce, garlic powder, salt, black pepper, and chili flakes (if desired). Stir well.
- 2.
Bring the sauce to a gentle simmer over medium heat, stirring occasionally. Reduce the heat to low and let it cook for 10 minutes to allow the flavors to meld together.
- 3.
Remove the sauce from heat and let it cool slightly. Transfer the sauce to a blender or use an immersion blender to blend until smooth.
- 4.
Heat the pulled pork in a skillet over medium heat until warmed through. Pour the lime coconut sauce over the pork and stir well to coat.
- 5.
Warm tortillas on a griddle or in the microwave.
- 6.
Assemble your pork street tacos by spooning the pork mixture onto each tortilla. Top with sliced radish, chopped red onion, avocado slices, and fresh cilantro.
- 7.
Serve the tacos warm and enjoy the burst of flavors!
