Grilled Spiced Tofu Salad
ingredients
- 0.45 kg firm tofu, drained and pressed
- 4 anchovy fillets, chopped
- 4 cups lettuce, torn
- 1 cup cherry tomatoes, halved
- 1 cup cooked lentils
- 2 tablespoons balsamic vinegar
- 2 tablespoons fresh lemon juice
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon ground paprika
- 1/2 teaspoon ground turmeric
- Freshly ground black pepper, to taste

Preheat the grill to medium-high heat.

In a small bowl, whisk together balsamic vinegar, lemon juice, soy sauce, Dijon mustard, smoked paprika, ground turmeric, and black pepper.

Slice the tofu into ½-inch thick slices and brush both sides with the dressing.

Grill tofu slices for 4-5 minutes per side until nicely charred.

Remove from heat and let cool slightly before cutting into bite-sized cubes.

In a large bowl, combine lettuce, cherry tomatoes, lentils, anchovies, and grilled tofu.

Drizzle the remaining dressing over the salad and toss gently until well coated.
