Tangy Tomato Beef Rice (Crockpot Edition)
ingredients
- 1 lb beef tips, cut into bite-sized pieces
- 1 cup diced tomatoes
- 1 cup crushed tomatoes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon Worcestershire sauce
- 1 cup beef broth
- 2 cups cooked rice
- Salt and pepper, to taste
- Fresh parsley, for garnish

In a large skillet, heat olive oil over medium-high heat. Add the beef tips and cook until browned on all sides. Remove from skillet and transfer to a crockpot.

In the same skillet, sauté the onion and garlic until softened and fragrant. Transfer to the crockpot.

Add diced tomatoes, crushed tomatoes, paprika, dried thyme, Worcestershire sauce, and beef broth to the crockpot. Stir well to combine.
