- 2 lbs (907 g) wildflower honey
- 1 can (11.5 oz / 340 ml) Welch's Concord grape juice concentrate
- 1/2 cup (120 ml) fresh orange juice
- 1/4 cup (60 ml) fresh pomegranate juice
- 1 tsp yeast nutrient
- 1/2 tsp yeast energizer
- 1 packet Red Star Premier Blanc yeast
- Spring water to top up to 1 gallon

Sanitize all equipment thoroughly to ensure a clean fermentation process.

In a large pot, gently warm the honey with 2 cups of spring water to dissolve it; avoid boiling.

Pour the honey mixture into a fermentation bucket and add the grape juice concentrate, orange juice, and pomegranate juice.

Stir in the yeast nutrient and energizer, then top up with spring water to reach a total volume of 1 gallon.

Mix the must well and take an initial gravity reading, aiming for around 1.100-1.110.
- 6.
Pitch the yeast according to the package instructions.

Seal the fermentation bucket with an airlock and store it in a cool, dark spot.

After 2-3 weeks, or when bubbles subside, rack the pyment into a clean carboy for aging.
- 9.
Allow the pyment to age for 3-6 months, racking as necessary for clarity.
- 10.
Once stable and clear, bottle the pyment and let it age for an additional 6-12 months before tasting.
