Spicy Loaded Breakfast Bowl

- 6 slices bacon, chopped
- 1 lb diced potatoes, frozen or fresh
- 1/2 lb breakfast sausage, crumbled
- 4 large eggs
- 1 cup diced onions
- 1/2 cup diced jalapeños
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 cup green onions, chopped, for garnish

In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving the rendered fat in the skillet.

If using fresh potatoes, add diced potatoes to the skillet and cook for about 10-12 minutes until golden and tender. If using frozen, follow package instructions. Season with salt and pepper.

Push the potatoes to one side of the skillet, and add the crumbled sausage to the empty side. Cook until browned and fully cooked through, about 5-7 minutes.

In the meantime, whisk the eggs in a bowl with a pinch of salt and pepper. Pour them into the skillet and scramble until just set.

Add the diced onions and jalapeños to the skillet, mixing all ingredients together. Cook for an additional 2-3 minutes until the vegetables soften.

Remove from heat and stir in the crispy bacon.

Divide the mixture among bowls and top each with a generous sprinkle of shredded cheddar cheese and a dollop of salsa.

Garnish with chopped green onions and serve immediately.
