ingredients
- 100g rolled oats
- 300ml vegetable broth
- 50g mushrooms, sliced
- 1 small zucchini, diced
- 1 small carrot, grated
- 1/2 red bell pepper, chopped
- 2 spring onions, sliced
- 100g tofu, diced
- 1 tablespoon olive oil
- 2 teaspoons soy sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin powder
- Salt and pepper to taste

In a saucepan, heat olive oil over medium heat and sauté mushrooms, zucchini, carrot, red bell pepper, and spring onions for 2-3 minutes.

Add tofu and continue sautéing for another 2-3 minutes.

Add rolled oats to the pan and toast them for 1 minute while stirring.

Pour vegetable broth into the pan and bring it to a boil, then reduce to a simmer.

Stir in soy sauce, garlic powder, cumin powder, salt, and pepper.

Cook for about 5-7 minutes until the oats are thick and creamy.
