Tender marinated pork on a bed of vermicelli noodles with fresh herbs, pickled veggies, and nuoc cham sauce. A refreshing and flavorful dish perfect for a hot summer day.
ingredients
- 8 oz thin pork slices
- 4 oz vermicelli noodles
- 1/4 cup Nuoc Cham sauce
- 1/2 cucumber, julienned
- 1 carrot, julienned
- Handful of mint and cilantro leaves
- 2 tbsp sugar
- 2 tbsp fish sauce
- 2 cloves garlic, minced
- 1 tsp soy sauce
- 1 tsp vegetable oil
steps

Marinate pork with sugar, fish sauce, garlic, soy sauce, and oil. Refrigerate for 1 hour.

Cook vermicelli noodles as per package instructions. Rinse under cold water and drain.
- 3.
Grill or pan-fry marinated pork until cooked through. Slice into thin strips.
- 4.
Divide noodles into bowls, top with pork, cucumber, carrot, herbs.
- 5.
Drizzle Nuoc Cham sauce over the bowl. Enjoy!
