- 4 oz vermicelli noodles
- 2 large eggs
- 1 bunch pak choi, roughly chopped
- 1 medium sweet potato, peeled and diced
- 1 medium white potato, peeled and diced
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 2 tbsp vegetable oil
- 2 cups vegetable broth or water
- Salt and pepper to taste
- Optional: chopped scallions and sesame seeds for garnish
