Wild Oat Cereal Mead

- 6 cups wild oats
- 9 cups water
- 2 large oranges, juiced and zested
- 2 large lemons, juiced and zested
- 3 cups honey
- Wine yeast

In a large pot, bring 9 cups of water to a boil.

Once boiling, add 6 cups of wild oats and reduce the heat to a simmer for about 20 minutes, stirring occasionally.

Remove from heat and let the mixture cool to room temperature.

Once cooled, strain the liquid through a fine mesh sieve to separate the oat solids.

In a large mixing bowl, combine the strained oat liquid, the juice and zest of the oranges, the juice and zest of the lemons, and 3 cups of honey. Stir until the honey is fully dissolved.

Sprinkle in the wine yeast and stir gently to encourage aeration.

Transfer the mixture to a sanitized fermentation vessel, leaving some headspace.

Seal the vessel with an airlock and store it in a cool, dark place for 1 to 2 weeks, or until fermentation completes.

After fermentation, bottle the mixture, ensuring to leave some headspace, and refrigerate. Serve chilled.
