Zaatar Pistachio Baklava Bars

- 1 package phyllo dough (16 oz), thawed
- 1 cup unsalted pistachios, finely chopped
- 2 tablespoons zaatar spice blend
- 1 cup unsalted butter, melted
- 1 cup honey
- 1/2 cup water
- 1 cup sugar
- 1 teaspoon vanilla extract
- Optional: powdered sugar for dusting

Preheat oven to 350°F (175°C).

In a bowl, combine finely chopped pistachios and zaatar. Mix well and set aside.

Layer half of the phyllo sheets (about 12 sheets), brushing each with melted butter, in a greased 9x13 inch baking pan.

Sprinkle half of the pistachio-zaatar mixture evenly over the layered phyllo.

Repeat with another layer of phyllo, brushing with butter and adding the remaining pistachio-zaatar mix. Finish with the remaining phyllo sheets, again brushing with butter on each layer.

Cut the assembled baklava into diamond-shaped pieces using a sharp knife.

Bake in the preheated oven for 30-35 minutes or until golden brown and crisp.

While the baklava is baking, make the syrup by boiling honey, water, sugar, and vanilla extract in a pot for about 10 minutes. Remove from heat and let cool.

Once the baklava is done baking, pour the cooled syrup evenly over the hot baklava. Allow to sit for several hours to soak.

Optionally dust with powdered sugar before serving.
