Egg White Wrap Kale and Bean Fiesta Tacos
ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 bell peppers, thinly sliced
- 2 cloves garlic, minced
- 3 cups kale, stems removed and chopped
- 1 can black beans, drained and rinsed
- 1 teaspoon chili powder
- 1/2 teaspoon cumin powder
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- Salt and pepper to taste
- 8 egg white wrapsToppings: avocado slices, salsa, sour cream, cilantro

Heat olive oil in a pan over medium heat. Sauté onions and bell peppers until softened.

Add garlic and kale to the pan. Cook until kale is wilted.

Stir in black beans, chili powder, cumin powder, cayenne pepper, salt, and pepper. Cook for another 3-4 minutes.
