- 4 salmon fillets (6 oz each)
- 1 cup black rice
- 2 cups baby spinach
- 2 cups kale, chopped
- 8 ounces mushrooms, sliced

- 3 garlic cloves, minced
- 2 roma tomatoes, diced
- 1 cucumber, sliced
- Olive oil
- Salt and pepper to taste
