Zesty SMaSH Zythos

- 8 lbs Pale Malt (2-row)
- 1 oz Zythos hops (60 minutes)
- 0.5 oz Zythos hops (15 minutes)
- 0.5 oz Zythos hops (5 minutes)
- 1 packet American Ale Yeast
- 0.5 cup Priming Sugar (for bottling)
- 5 gallons water

Heat 3 gallons of water to approximately 165°F (74°C).

Add the crushed Pale Malt and mash at 152°F (67°C) for 60 minutes.
- 3.
Sparge with 170°F (77°C) water until you collect 6 gallons of wort.

Bring the wort to a boil and add 1 oz of Zythos hops; boil for 60 minutes.
- 5.
After 45 minutes, add the 0.5 oz of Zythos hops.
- 6.
At the one-hour mark, add the final 0.5 oz of Zythos hops and boil for an additional 5 minutes.
- 7.
Cool the wort quickly using an immersion chiller or ice bath.
- 8.
Transfer the cooled wort to a sanitized fermenter and top up to 5 gallons with water.
- 9.
Pitch the American Ale yeast and ferment at 68°F (20°C) for 1-2 weeks.
- 10.
After fermentation is complete, dissolve priming sugar in a small amount of water and add it to the bottling bucket.

Bottling into sanitized bottles, cap them, and let them carbonate for 1-2 weeks.
