Zucchini Noodle Fiesta

- 2 large zucchini, spiralized into noodles
- 1 lb bison steak, thinly sliced
- 1 cup corn kernels
- 1 cup wild mushrooms, sliced
- 1 red bell pepper, cut into thin strips
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons tamari or soy sauce
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish

In a large skillet, heat the olive oil over medium-high heat.

Add the bison slices and cook until browned. Remove from the skillet and set aside.

In the same skillet, add the onions, garlic, and wild mushrooms. Sauté until onions are translucent and mushrooms have softened.

Add the corn, bell pepper, smoked paprika, chili powder, and cumin. Sauté for another 2-3 minutes.

Push the veggies to one side of the skillet and add the zucchini noodles to the other side. Cook for 2-3 minutes or until the noodles are tender-crisp.

Mix the bison back into the skillet and pour in the tamari (or soy sauce) and maple syrup. Stir well to combine all ingredients.

Season with salt and pepper to taste and cook for an additional minute.

Remove from heat and garnish with fresh cilantro.
